Expertise: On the effect of nutrition on the immune system. Current areas of research are: the role of diet in the initiation of autoimmune-mediated insulin dependent Diabetes Mellitus (Type I Diabetes), effects of lipids on the development of the immune system, the effect of dietary nutrients on the gut associated immune system, the use of specific lipids in the prevention and treatment of cancer and the modulation of immune function and tumour metabolism.
