About the LSU Agricultural Center: The LSU AgCenter is one of 8 campuses within the LSU enterprise. The LSU AgCenter includes the Louisiana Agricultural Experiment Station, which conducts agricultural-based research, and the Louisiana Cooperative Extension Service, which extends the knowledge derived from research to the people of the state. The AgCenter is headquartered in Baton Rouge and has 12 academic departments and five regions, which are made up of 15 branch research stations and an extension office in each parish. Position Description: The Assistant Meats Lab Manager will support the day-to-day operations of the Meats Laboratory. Responsibilities include assisting with animal slaughter, carcass fabrication, meat product processing, and data collection related to these activities. The individual will also participate in scientific testing, including microbiological analysis of both products and equipment. This position reports to Dr. Philip Elzer. Specific duties are as follows:

Assist with routine operations in the Meats Laboratory, including slaughtering, fabrication, processing, and accurate data collection.

Support research efforts by conducting scientific and microbiological testing, coordinating projects with faculty and graduate students, and maintaining laboratory standards.

Train and supervise undergraduate students in laboratory procedures, facility operations, and safety protocols.

Performs other duties as assigned.
Candidates with knowledge of HACCP principles, strong attention to quality assurance, and experience with humane livestock handling are preferred. The facility supports teaching, research, and extension activities for faculty, graduate students, and undergraduates.
Qualification Requirements: More than three years meat and livestock industry experience, B.S. degree in animal science or food science preferred. The candidate must have a strong work ethic, along with the capacity to work with different personalities. The ability to communicate clearly and concisely is desired.

Salary and Benefits: Salary will be commensurate with qualifications and experience. The LSU AgCenter has an attractive benefits package with a wide variety of benefit options.
